Nokdujeon

Nokdujeon (savory mung bean pancake). A satisfying and savory Korean street food, traditionally known as "bindaetteok". This hearty pancake is made from ground mung beans (nokdu) mixed with crunchy vegetables like bean sprouts and sometimes spicy green peppers. It is pan-fried until the edges are deep golden brown and exceptionally crispy, while the interior remains moist and rich. The natural earthy and nutty flavor of the mung beans makes this a substantial and delicious appetizer or side dish. Served with a tangy soy-vinegar dipping sauce.
